Wild Rice With Mushrooms and Almonds image

This recipe is great with any meat dish. Wild rice is not really rice, but the grain of a native American grass that grows in swampy water. Try it, you will love it!

Number Of Ingredients 6

1 cup(s) uncooked wild rice
1/4 cup(s) butter
1/2 cup(s) almonds, slivered
2 tablespoon(s) finely chopped green onions
1 can(s) (8oz.) mushroom stems and pieces, drained
3 cup(s) chicken broth

Steps:

  • Wash and drain rice. Melt butter in large skillet.Add rice, almonds, onions and mushrooms;cook and stir until almonds are golden brown, about 20 minutes.
  • Heat oven to 325. Pour rice mixture into ungreased 11/2-quart casserole .Heat chicken broth to boiling;stir into rice mixture.
  • Cover tightly;bake about 11/2 hours or until all liquid is absorbed and rice is tender and fluffy.
