Wholesome Quick Bread image

I make all my breads healthy and low in fat. My family and friends are pleased with this good and good-for-you bread.-Rebecca Harris, Raytown, Missouri

Yield 2 loaves (16 slices each).

Number Of Ingredients 18

2 cups whole wheat flour
3/4 cup sugar
1/4 cup quick-cooking oats
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3/4 cup buttermilk
1/2 cup egg substitute
1/3 cup unsweetened applesauce
1 teaspoon vanilla extract
1 cup mashed ripe bananas
TOPPING:
1/3 cup chopped pecans
2 tablespoons brown sugar
2 tablespoons quick-cooking oats
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Steps:

  • In a large bowl, combine the flour, sugar, oats, baking powder, baking soda, cinnamon and nutmeg. In a small bowl, whisk the buttermilk, egg substitute, applesauce and vanilla. Stir into dry ingredients just until moistened. Fold in bananas. Transfer to two 8x4-in. loaf pans that have been coated with cooking spray., Combine topping ingredients; sprinkle over top. Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes before removing to a wire rack to cool completely.
