Number Of Ingredients 12

2/3 c whole wheat flour
1/3 c old-fashioned or quick oatmeal
2 Tbsp whole flaxseeds
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp cinnamon
1/8 tsp salt (omit if using salted butter)
1 large egg, separated
1 c buttermilk
1 Tbsp packed brown sugar or raw sugar
2 Tbsp canola oil or melted butter
1 tsp vanilla

Steps:

  • 1. Mix dry ingredients.
  • 2. Add wet ingredients to dry ingredients except for egg white.
  • 3. Whip egg white until fluffy.
  • 4. Fold into batter.
  • 5. Cook on a hot griddle on both sides until deep golden brown. Yield (8) 4-inch pancakes
