Whole Grain Irish Soda Bread image

Number Of Ingredients 10

1 1/4 cups whole wheat flour
1 1/2 cups unbleached flour, white
1/4 cup wheat germ
1/4 cup brown sugar
1/2 teaspoon salt
2 teaspoons baking soda
2 teaspoons baking powder, double-acting
1 1/2 cups buttermilk, low-fat
2 tablespoons margarine, diet
1/2 cup currants or raisins

Steps:

  • I also serve this at dinner, and it is a big hit.1. Preheat oven to 375ºF.2. In a bowl, stir together all dry ingredients.3. Stir in buttermilk and margarine until batter is blended but still lumpy. 4. Fold in currants or raisins.5. Spoon batter into buttered and flour-dusted 8-inch round pan do not smooth the surface.6. Bake for 40-45 minutes or until a pick inserted in the center comes out clean. Cool bread in the pan for 10 minutes, then turn out on a wire rack. Serve warm, cooled, or sliced and toasted.Food exchanges per 1-wedge serving: 1½ BREAD, 1 FAT
