WHITE BEAN SOUP WITH GREMOLATA image

2 t. olive oil
1/2 c. finely chopped pancetta
1 c. chopped onion
1/2 c. chopped celery
2 t. minced garlic
2 c. chicken broth
1/2 c. water
1/4 t. pepper
2 cans cannellini beans, rinsed & drained
1 bay leaf
Gremolata:
1 T. chopped parsely
2 t. grated lemon rind
1 t. minced garlic

Steps:

  • To prepare the soup, heat oil in a large saucepan over medium-high heat. Add pancetta; saute 2 minutes. Stir in onion, celery, and 2 teaspoons garlic. Saute 3 minutes or until almost tender. Stir in broth and next 4 ingredients (thru bay leaf.) Bring to a boil, reduce heat, and simmer 8 minutes. to prepare gremolata, combine parsley, rind, and 1 teaspoon garlic. Sprinkle over soup.
