1/2 cup unbleached white flour
1 cup whole wheat flour
1 cup wheat bran
3/4 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts
1 cup dried cranberries
1 egg
1/2 cup milk
1 cup orange juice
1/3 cup vegetable oil

Steps:

  • preheat oven to 350 degrees.
  • grease 9x5x3 loaf pan.
  • in large bowl mix egg, oil, milk and orange juice.
  • in separate bowl combine dry ingredients.
  • add dry ingredients to wet slowly, folding till just mixed.
  • pour batter into loaf pan.
  • bake on center shelf for 55-60 minutes or until firm in center.
  • cool in pan for 10 minutes before removing to bakers rack.
  • let cool completely before slicing.
