Steps:
- 1. In large bowl, soak wheat berries overnight in enough water to cover by 2 inches. 2. Drain wheat berries. In 4-quart saucepan, heat 7 cups water to boiling over high heat. Add soaked wheat berries; heat to boiling. Reduce heat to low; cover and simmer until wheat berries are tender, about 1 hour. Drain. 3. Meanwhile, coarsely chop spinach. Chop tomato. Place dried tomato halves in small bowl; add 1 cup boiling water. Let stand 5 minutes; drain well. Coarsely chop dried tomatoes. 4. Prepare dressing: In medium bowl, with wire whisk or fork, mix oil, vinegar, mustard, salt, sugar, and pepper until blended. Add raisins, diced tomato, chopped dried tomatoes, spinach, and wheat berries; toss well.
