WATERMELON, FETA, AND OLIVE SALAD image

Number Of Ingredients 11

3 cups loosely packed Arugula
1 cup loosely packed parsley
1 cup loosely packed torn mint
1 2-lb piece seedless watermelon, 1" cubes
20 Kalamata olives, halved
1 jalapeno, julienned
1/4 small red onion, thinly sliced and soaked in ice water for 30 minutes
1/4 cup feta cheese, crumbled
2 Tbsp. olive oil
2 limes, halved
Sea salt and pepper

Steps:

  • 1. Toss greens and divide among 4 plates or bowls. 2.In medium bowl, toss watermelon, olives, jalapeno and onion. Spoon mixture and juice over the greens. Sprinkle with feta and drizzle with olive oil. Squeeze 1/2 lime over each salad and sprinkle with salt and pepper.
