Popeye's Cajun Rice image

Originating in New Orleans, Popeye's is the name of a fast food chain specializing in New Orleans style fried chicken...and it is wonderful! One of my favorite side dishes at Popeye's is the Cajun Rice. I found this recipe on copykat.com and it is so very near the same excellent flavor found at Popeye's, I just have to share.

Number Of Ingredients 10

2 c. rice cooked in 4 c. chicken broth
1 lb ground chuck or pork sausage
1/2 c chopped bell peppers
1/3 c chopped green onions
1 clove garlic, minced
1/2 c diced celery
1/2 tsp tony's cajun seasoning
1/4 tsp red cayenne pepper
1/4 tsp black pepper
1/4-1/3 c. water

Steps:

  • 1. Cook meat, onions, bell peppers, garlic and celery in 12" skillet until meat is no longer pink and onions are tender. Drain well and return to skillet.
  • 2. Add cooked rice, water, cajun seasoning, cayenne pepper, and black pepper to the meat mixture in the skillet.
  • 3. Simmer covered for 10-12 min. or until water is absorbed. Stir as needed to prevent sticking. Turn heat off and leave meat and rice mixture covered about 5 min. before serving.
