WATERMELON CUBE WITH BALSAMIC VINEGAR image

1/2 cup watermelon juice
salt
about 1/2 pound seedless red or yellow watermelon flesh
aged balsamic vinegar, for garnishing

Steps:

  • Strain the watermelon juice through a chinois or fine mesh sieve into a measuring cup with a sprout. Season to taste with salt. Cut watermelon flesh into six 1 1/2 inch cubes. Use small end of melon baller to remove a scoop of flesh from the other side of each watermelon cube, creating a small cavity for the juice. To serve place a watermelon cube, cavity side up, on each 6 small plates and pour watermelon juice into the cavity. Garnish each serving with a drizzle of balsamic vinegar.
