WARM & CREAMY ORANGE RICE PUDDING image

This recipe and photo came to me from my local Kroger store. I have developed a love affair with rice pudding of late, especially since discovering so many new variations on the original. This one sounds so delicious and soothing as a comfort food. You gotta try it!

Number Of Ingredients 8

1 c water
2 tsp vanilla extract
1 tsp ground ginger
2 Tbsp sugar
1 c arborio rice
1 Tbsp orange zest
2 c low fat milk
1/4 c orange segments

Steps:

  • 1. Bring water to a boil in a medium saucepan; add vanilla, ginger, sugar, and rice.
  • 2. Lower heat and allow rice to absorb liquid, stirring as needed, about 10 minutes.
  • 3. When most of the liquid is absorbed, add the orange zest and 1 cup of the milk. Allow the rice to absorb the liquid and then add the other 1 cup milk.
  • 4. Continue cooking until all liquid is absorbed and rice is fully cooked.
  • 5. Serve warm in individual bowls, each topped with an orange segment.
