WACKY CAKE (SUPER MOIST CHOCOLATELY BIRTHDAY CAKE) image

Yield Makes a double layer round cake (serves 12).

Number Of Ingredients 10

3 cups all-purpose flour
2 cups organic sugar (evaporated cane juice)
¼ cup + 2 Tbsp. cocoa powder
2 tsp. baking soda
1 tsp. fine sea salt
2 Tbsp. cider vinegar
2 cups cold water
2 tsp. vanilla
½ cup expeller pressed canola oil
½ cup natural unsweetened applesauce

Steps:

  • Preheat oven to 350 degrees. Lightly oil and flour 2 round cake pans and set aside. In a large bowl, sift together flour, sugar, cocoa, baking soda and sea salt. Stir canola oil and applesauce together in small bowl. Make 3 wells in dry mixture - 1 large and 2 small. In large well, pour oil and applesauce mixture. Pour vinegar into one of the small wells and vanilla into the other small well. Add water and stir all together with wisk or fork until smooth. Divide batter between the two prepared pans and bake for 35 minutes or until a toothpick inserted into the center of the cake comes out clean.
