1/3 cup white vinegar
2 1/2 tablespoons sugar
1/2 cup vegetable oil
3 cups carrots, julienned
2 cups english cucumbers, julienned
1 jalapeño pepper, minced
1/4 cup mint
1/4 cup cilantro

Steps:

  • Whisk together vinegar, sugar and oil. Toss with remaining ingredients. Chill until serving.
