Vietnam Fried Rice image

from More-with-Less cookbook. The kids enjoy this and I find it a great way to recycle leftover odds and ends.

4 tablespoons oil
1/4-1/2 lb cooked meat (I even use leftover ground meat if I have it.) or 1/4-1/2 lb raw meat, cut into thin strips. (I even use leftover ground meat if I have it.)
3 garlic cloves, minced
1 large onion, chopped
1 teaspoon salt
1 teaspoon pepper
1 teaspoon sugar
1 tablespoon soy sauce
3 cups cooked rice
1 cup leftover vegetables (peas, green beans, carrots, etc.) or 1 cup frozen vegetables (peas, green beans, carrots, etc.)
2 eggs, beaten

Steps:

  • Heat oil in large skillet. Add meat, garlic, onion, and seasonings. Stir fry 1 -2 minutes until meat is tender and hot.
  • Add cooked rice. Stir-fry 5 minutes.
  • Add vegetables. Stir well into mixture and fry until heated through.
  • Just before serving, add eggs. Stir carefully until eggs are cooked. Serve hot.
