VICKI'S MASHED POTATO ROLLS image

Yield 2 dozen

Number Of Ingredients 9

1 pkg. active dry yeast
1/4 c lukewarm water
1 c prepared mashed potatoes(hot)
1/4 c butter
1/4 c sugar
1 1/2 tsp salt
1 c scalded milk
1 egg
4-4 1/2 c flour

Steps:

  • Soften yeast in water, set aside. Combine prepared potatoes, butter, sugar, salt & milk. Cool to lukewarm. Add yeast & egg. Stir in 2 c flour, beat well. Stir in remaining flour or enough to make soft dough. Knead on lightly floured surface until smooth & elastic. (up to 8 min) Place in lightly greased bowl, turning once to coat.Cover: put in warm place, let rise to double in size, about 1 hr. Punch down, shape into ball, cover let rest 10 min. Shape into rolls, place on a greased cookie sheet. Let rise until double about 1 hr Bake at 350 10-12 min or until browned. Makes 2 dozen.
