VERY VEGGIE CASSEROLE image

Number Of Ingredients 7

½ c (about 12) triscuit crackers, crushed
1 Tbsp butter, melted
1 pkg (16 oz.) frozen mixed vegetables (broccoli, red pepper, and carrots or cauliflower), thawed and drained
1 can(s) (8 oz.) sliced water chestnuts, drained
½ c sour cream
½ c shredded mild cheddar cheese
1/3 c chopped onions

Steps:

  • 1. Mix cracker crumbs and butter until completely blended.
  • 2. Combine remaining ingredients in a 1-qt. casserole and top with remaining crumb mixture.
  • 3. Bake in a preheated 350º oven for 35-40 minutes or until heated.
  • 4. Serve as a side dish with any meat of your choice.
