VERY MOIST BANANA CAKE image

170g Butter, softened
400g Castor Sugar
3 nos. Eggs, lightly beaten
6g Vanilla Extract
375g Plain Flour, sifted
1 1/2 teaspoon Bicarbonate of Soda
1/4 teaspoon Salt
355g Buttermilk
10g Lemon Juice, strained
350g Bananas, mashed
Ingredients for Cream Cheese Frosting :
115g Butter, softened
225g Cream Cheese, softened
420g Icing Sugar, sifted
5g Vanilla Extract

Steps:

  • 1. Preheat oven to 135 Deg Celsius (for 9x13 tin)/150 Deg Celsius (for 8x8 tin). Grease and line a cake tin. 2. In a bowl, mix mashed bananas with lemon juice, set aside. In another bowl, sift together flour, bicarbonate of soda and salt. Set Aside. 3. In a large mixing bowl, cream butter and sugar till light and fluffy. N.B. Butter mixture will still be rather gritty-looking. Beat in the eggs gradually a little at a time. Stir in vanilla extract. Fold in the flour mixture alternately with the buttermilk. Stir in the mashed banana mixture and mix well. Pour batter in prepared cake tin. 4. Bake in preheated oven for 1 - 1 1/2 hrs or till cooked. Remove from oven and place cake directly into freezer for 45 minutes. This will make the cake very moist but is optional. To Prepare the Frosting : 1. In a large bowl,cream butter and cream cheese till smooth. 2. Beat in vanilla extract. Add in icing sugar and beat on low speed until combined, then on high speed till frosting is smooth. Spread on cooled cake. 12 Servings
