Veracruz Style Red Snapper image

This recipe calls for red snapper but any thin white-fish fillets will work just as well. Use whatever looks freshest and best at the store.

Number Of Ingredients 11

4 - 6-8 oz red snapper fillets
- cooking spray
1/2 teaspoon(s) ground cumin
1/4 teaspoon(s) sea salt
1/4 teaspoon(s) red pepper flakes
1/4 cup(s) chopped fresh cilantro
1/4 cup(s) chopped, pitted green olives
1/4 cup(s) bottled salsa
1 can(s) (16-ounce) pinto beans, drained
1 can(s) (14.5-ounce) diced tomatoes, drained
4 - lime wedges

Steps:

  • Preheat grill or broiler. Coat both sides of fish with cooking spray, and sprinkle with cumin, salt, and pepper flakes.
  • Place fish on grill rack, or broiler pan coated with cooking spray. Cook fillets 5 minutes on each side or until flesh flakes with a fork.
  • Combine cilantro and remaining ingredients, except lime wedges. Serve fish with salsa and lime wedges.
