Velvet Avocado Soup image

I love avocados! Found this in Quick Soups and Salads by Duncan and Patrick. (Cook time is actually chill time.)

Number Of Ingredients 8

2 avocados, peeled & mashed
3 c chicken stock
1 Tbsp green onions, chopped
1/2 lime - juice of
hot pepper sauce, to taste
salt and white pepper, to taste
sour cream and salsa to serve
cilantro for garnish, if desired

Steps:

  • 1. Blend all ingredients except for sour cream and salsa.
  • 2. Chill until ready to serve.
  • 3. Add a dollop of sour cream and some salsa to each serving. Garnish with cilantro.
