vegetarian 3 bean chili image

Number Of Ingredients 22

3/4 cup dried pinto beans
3/4 cup dried kidney beans
1/3 cup dried northern beans
1/4 cup dried chickpeas
2 tablespoons olive oil
5 large cloves of garlic diced
2 medium onions diced
3 celery stalks diced
2 cups winter squash chopped
8 ounces baby portobello mushrooms-sliced
2 fifteen oz cans diced tomatoes
2.5 tablespoons chili powder
.5 tablespoon cumin
.5 tablespoon coriander
2 teaspoons smoked paprika
1 teaspoon cayenne - scant teaspoon
1 salt to taste
1.5 cups one-two cups reserved bean liquid from cooking beans
1 bunch cilantro
1 avocado
1 yogurt, sour cream, cheese....
3 corn on cob

Steps:

  • soak beans... and cook beans !! save 2 cups of bean liquid
  • saute garlic, onion, celery for 5 mins in olive oil
  • add squash and mushrooms and season with salt.. cook for 5 mins
  • add spices and tomatoes
  • cook for 10-15 mins until squash is tender-- adding reserved bean liquid as needed
  • add salt to taste, add cooked beans and cook for 8-10 more mins
