Vegan Peach-Banana-Coconut Smoothie image

A great summer smoothie that uses juicy local peaches, overripe bananas, and fresh lemon verbena. If you don't use already chilled peaches and frozen bananas, pour it over ice cubes.

2 ripe peaches, chilled
2 ripe bananas, peeled and frozen
15 leaves fresh lemon verbena
1 cup reduced-fat coconut milk
1 lime, juiced
1 tablespoon water, or more if needed
4 cubes ice cubes

Steps:

  • Combine peaches, bananas, lemon verbena, coconut milk, and lime juice in a blender; blend until smooth. If too thick, add water until mixture reaches desired consistency.
  • Add ice cubes to 2 tall glasses and pour peach mixture on top. Serve immediately.
