Vegan Mediterranean Salad image

Recently, we hosted an International Potluck Dinner Party at our home. Our theme was Greek food, so of course, we listened to Trio Bel Canto (the only Greek music allowed). Here's a recipe from our party!

¼ cup extra-virgin olive oil
1 lemon, juiced
1 teaspoon garlic powder, or more to taste
salt and ground black pepper to taste
1 red bell pepper, diced
1 green bell peppers, diced
3 Persian cucumbers, diced
4 tomatoes, chopped
4 radishes, chopped, or more to taste
2 kosher dill pickles, chopped
3 green onions, sliced, or more to taste

Steps:

  • Whisk olive oil, lemon, garlic powder, salt, and black pepper in a large bowl. Add red bell pepper, green bell pepper, cucumbers, tomatoes, radishes, dill pickles, and green onions; toss to combine. Let marinate in the refrigerator until flavors combine, 10 to 15 minutes.
