Vanilla Cake image

This is one of the best vanilla cakes I have ever tasted...My own original recipe...I love vanilla anything..and wanted a good tasting vanilla flavored cake to serve fresh fruit with. This also makes great cupcakes...My kids love this one with fresh Georgia peaches...

1/3 c butter, softened
3/4 c sugar
1 egg
1 Tbsp pure vanilla extract
1 c self rising flour, sifted 1 time
1/3 c buttermilk
1 lightly greased and floured or sprayed 8x8 pan
glaze
1/2 c powdered sugar-sifted once
1 Tbsp milk
1/2 tsp pure vanilla extract

Steps:

  • 1. Prepare the 8x8 baking pan with by using floured cooking spray or lightly grease and flour the pan. Preheat oven to 350%.
  • 2. Cream the butter and sugar until very light and fluffy...about 3-5 minutes. Add the egg, mix well, add the vanilla and mix well. Add the flour and buttermilk alternately, beginning and ending with the flour. Bake at 350 for 20-30 minutes, depending on the oven and pan used. Toothpick comes clean when done, edges begin turning golden. Remove to cooling rack.
  • 3. Mix up the glaze and have it ready when the cake comes out of the oven. Mix the powdered sugar, milk and vanilla until well blended and the consistency of a thick syrup. Add more sugar or milk to get it just right. Immediately begin brushing the warm cake with the glaze mixture, brush evenly using all the mixture. Let cake cool completely. This cake is delicious with fresh fruit, we love it with peaches or strawberries, but its wonderful with just a glass of ice cold milk...
