This is my all-time favorite pumpkin bread recipe. The addition of the vanilla pudding makes it so moist and delicious!

Steps:
- In a mixing bowl, beat eggs.
- Add oil and pumpkin; beat until smooth.
- Combine remaining ingredients; gradually beat into pumpkin mixture.
- Pour into 5 (5 x 2 1/2") OR 2 (8 x 4") loaf pans.
- Bake the 5" pans at 325^ for 50 to 55 minutes OR 75 to 80 minutes for the 8" pans.
- Cool in pans 10 minutes before removing to cool on racks.
