Tutu's Hawaiian Cookies image

Did you know that "tutu" is one way of saying "grandma" in Hawaiian? These cookies were inspired by some of Hawaii's most popular flavors: pineapple and coconut. Bake them up for a delicious cookie that'll impress Tutu...and everyone else!

Number Of Ingredients 10

3/4 cup shortening
1 1/4 cups granulated sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup crushed pineapple, well drained
1/2 cup shredded coconut, finely chopped

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl with an electric mixer, combine shortening, sugar, vanilla, and almond extract; mix well. Add egg and continue mixing until mixture is fluffy. Set aside.
  • In a large bowl, combine flour, baking powder, and salt. Add flour mixture to shortening mixture; mix well. Stir in pineapple.
  • Drop by teaspoonfuls 2-inches apart onto an ungreased baking sheet. Sprinkle evenly with coconut. Bake for 15 to 20 minutes or until lightly browned.
