Tuscan Chicken image

Not the original recipe I made changes to the original Tuscon chicken recipe. Will be good with roasted potatoes or over Pasta

Number Of Ingredients 10

2 tablespoon(s) olive oil, extra virgin
3-4 chicken breast filets
1/4 cup(s) complete seasoning
3 tablespoon(s) brummel & brown butter
3 clove(s) garlic chopped finely
1 cup(s) cherry tomatoes
2 cup(s) baby spinach
8 ounce(s) heavy cream
1 - shallots
1 cup(s) parmesan cheese grated

Steps:

  • Heat iron skillet to searing temperature. Cover chicken with complete seasoning and cook on each side for three minutes. Once seared place chicken on cooking sheet and place in a toaster oven at 350 for 30 minutes.
  • minutes. In a large skillet place Brummel & Brown in the pan to melt. Once melted add Garlic and let brown slightly to allow the aroma to permeate the air.
  • allow the aroma to permeate the air. Then add the cherry.tomatoes, Shallot, cook until tomatoes start to burst. Add spinach and let wilt. Then add basil and parsley
  • When thoroughly cooked add the heavy cream and the parmesan cheese cook until cheese is melted.
  • Place chicken on a platter and cover with the sauce. Add the left over sauce to a bowl and serve on the side.
