TURKEY WITH GARLIC AND ROSEMARY image

Garlic/Rosemary Butter Recipe-
1 stick butter chopped
1 garlic clove (minced)
1 tablespoon rosemary (minced)
1/2 teaspoon of orange zest
salt
pepper
1 Turkey
1-2 Large oranges sliced
1-2 Granny smith apples sliced
4 Rosemary sprigs
18 garlic cloves
1 cup chardonany
2-3 cups low salt chick broth (depends on size of turkey) _ (this will serve as the gravy base so make sure there is enough once reduced)

Steps:

  • Garlic/Rosemary Butter- mix and smash all ingredients refrigerate Turkey- Pat dry. Place several pats of butter under skin. Rub skin with soft special butter. Stuff cavity with 6 garlic cloves, rosemary, oranges, and apples. Rack turkey. Place 1/3 cup chicken broth in pan with remainder of garlic cloves. Cook turkey 1/3 of the way, and then add remainder of chicken broth and wine. Based with remainder of butter every 20 minutes. Tent turkey with foil when it starts to brown. Gravy - Once Turkey is done set aside for carving later. Place pan juices into a pot with cavity stuffing from Turkey. Bring to a boil fro ten minutes - strain contents. Place gravy on stove to reduce. Add cornstarch/water mixture to thicken if necessary.
