Turkey Shepherds Pie With Cauliflower Crust
Ingredients
1lb ground turkey
1 Tbsp olive oil
2 Tsp pepper (divided)
mushrooms
celery 3-4 stalks chopped
1 Tsp chili flakes
4 Pods garlic (crushed)
1 Tsp cumin
1/2 cup peppers (diced)
1 onion (diced)
1/2 cup peas
1 cup carrots (diced)
1 cup squash (diced)
1 cup dry wine.
sirachi, worchesterire, dijon mustard garlic salt to taste.
1 Tbsp flaxseed (ground)
1/2 cup almond milk
2 Tbsp fresh mint
mozerella/ machego shredded on top
cut into pieces
32 Ounces cauliflower (or 1 large)
Note
Use 2 ­3 cups of frozen veggies for a quick fix pie!

Steps:

  • Directions Heat oil. Add diced onion and saute 2 minutes. Add peppers, garlic, celery, mushrooms cumin, chili flakes and cook another minute. Add ground turkey, salt and cook about 3 minutes. or until brown. Add carrots, squash, peas, 1 tsp pepper, 1 tsp salt and cook about ten minutes till mixture is dry. Add flax seed, mint . Meantime cook in chick broth or microwave cauliflower florets till cooked ( about 10 minutes) Mash with 1 tsp pepper, 1 tsp salt and almond milk till you get chunky cauliflower mash add cheeses Line a pie plate with firmly packed turkey mixture. Add a layer of cauliflower mash on top. Sprinkle with coarsely ground flax and cheese. bake at 350 degrees for 45 minutes till crust gets golden
