TURKEY POT PIE image

Number Of Ingredients 14

Dark Meat from Turkey Roast, diced
2 Carrots, diced like frozen carrots (or use frozen ones)
3 potatoes, peeled & diced (or use leftover Mashed Potatoes)
1/2 bag of frozen peas
1/4 bag of frozen corn
Roux (Possibly, you may have to up the roux to 3T. Butter & Flour, b/c mine was still watery)
2 T. Butter
2 T. Flour
2 c. Turkey Broth
Pastry Crust:
1 1/4 c. Flour
1 stick cold, unsalted butter, cut into 1/2 " cubes (I used frozen, put it in the microwave for 30 sec. at Power Level 4, then smooshed it by hand, and that worked)
1/4 t. salt
3-5 T. ice water

Steps:

  • Make the Roux, then add the potatoes. Smash some of the potatoes into it, to make it thicker. Then add the rest of the veggies & turkey. Pour into a 9x13 Pyrex dish. Roll out the Pastry Dough, and cover the entire dish with the pastry dough (there may be some left over...which you can save for another occasion). Brush the pastry dough with an egg wash. Bake in the oven at 350 deg. until the dough is browned, about 30 minutes. Enjoy!
