Steps:
- Brine turkey for an hour a pound in brining solution provided by Turkey Perfect, adding cayenne pepper to brining solution. When draining brine, pour through sieve to catch extra seasoning for use later. Stuff turkey with cuts of orange/lemon (do not peel) and onion, and then add whole (unchopped) stalks of sage, rosemary, and oregano. Melt butter and olive oil, white wine, cayenne pepper, and extra seasoning left over from brine. Use this to baste turkey. Cook turkey upside down for first 2/3, then turn over.
