Turkey Meatloaf Muffins image

We had left over ground turkey that needed to be used, but I couldn't find a ground turkey recipe that would work for my family so I created one... The chorizo can be optional, I had family members who either do not eat spicy (even mildly spicy) or do not eat pork (though chorizo is available in beef), and so I made half chorizo-free. They enjoyed it. For me, I like the kick of the Mexican spiciness! Enjoy!

Number Of Ingredients 6

1 1/2 pound(s) ground turkey
6 ounce(s) chorizo (mexican sausage, mild or medium) uncooked, crumbled
1 - large egg
1 cup(s) old fashioned whole grain oats
1 tablespoon(s) mrs. dash (salt alternative seasoning)
3/4 cup(s) shredded sharp cheddar cheese

Steps:

  • Preheat oven to 375 degrees.
  • Mix all ingredients. Don't be afraid to get your hands dirty!
  • Pat generous portions of mix into prepared muffin tin.
  • Bake for about 30 minutes/180 degrees.
