TURKEY LETTUCE WRAPS image

Peanut Sesame Sauce
3 medium whole scallions
3/4 cup smooth unsalted peanut butter
1/2 cup hoisin sauce
2 tablespoons fresh lemon juice
1 tablespoon soy sauce
2 teaspoon toasted sesame oil
Tabasco sauce to taste
Lettuce Wrap Ingredients
1 medium onion
1 tablespoon vegetable oil
1 lb ground turkey
1/2 cup Peanut Sesame Sauce
One 4-5 inch piece seedless cucumber
1/2 cup fresh mint or cilantro leaves
12 large butter lettuce leaves

Steps:

  • Peanut Sauce 1. Trim and coarsely chop the scallions (a heaping 1/3 cup). Combine them with the peanut butter, hoisin sauce, lemon juice, soy sauce, sesame oil, and Tabasco to taste in a food processor fitted with chopping blade. 2. Process until pureed. Add water, 1 tablespoon at a time (up to 1/4 cup), if needed to thin the sauce. Lettuce Wraps 1. Finely chop the onion (about 1 cup). Heat the veggie oil in a large heavy skillet over medium heat until hot. Reduce the heat to medium-low; add the onion and cook for about 5 minutes, or until it has softened. Add the turkey to the skillet and saute it, stirring with a fork to break it into pieces, for about 7 minutes, or until cooked through. 2. Meanwhile, make the Peanut Sesame Sauce. Add 1/2 cup of the sauce to the turkey mixture (refrigerate the remaining Peanut Sesame Sauce for another use, good for up to 5 days). Heat the turkey mixture just until the sauce bubbles. 3. Meanwhile, finely chop the cucumber (about 1 cup) and half the mint (or cilantro)leaves (about 1/4 cup); stir them into the hot turkey filling. Divide the filling and the remaining mint leaves among the lettuce leaves. Fold the sides of the leaves over the filling and roll up the leaves to enclose the filling. Serve with soy sauce for dipping.
