Tuna Stuffed Portabella Mushrooms image

Number Of Ingredients 11

1 can dark tuna in oil
2 tablespoons sweet red peppers, finely diced
2 tablespoons celery, finely diced
1/2 teaspoon red pepper flake
6 anchovies, mashed
1 tablespoon pitted black olives, finely diced
1 clove garlic, finely diced
2 tablespoons low fat plain yogurt
1/2 teaspoon kosher salt
2 tablespoons feta cheese, crumbled
4 large portabella mushrooms

Steps:

  • Drain the tuna and reserve the oil. Place the tuna in a bowl and break it into loose flakes. Add the sweet pepper, celery, red pepper flakes, anchovies, olives, garlic, 1 tablespoon of the tuna oil, yoghurt and salt and mix well. Divide the tuna into four portions and spoon into the mushroom caps. Sprinkle each mushroom with feta cheese and bake at 350 degrees for 20 minutes until the cheese begins to brown.
