Trout & spelt salad with watercress image

85g thin-stemmed broccoli
juice ½ orange
1 tbsp chopped flat leaf parsley
140g ready-to-eat spelt
140g hot-smoked trout , flaked
large handful watercress

Steps:

  • Steam the broccoli for 3 mins until al dente. Mix together the orange juice, parsley and spelt, then top with the broccoli, trout and watercress.
