This one was very interesting...the bananas seemed a bit weird to put in here, but it ended up working much better than I expected. Everyone had seconds, and it was pretty simple to put together. The only time consuming part was getting the sweet potatoes ready and cooked. use canned yams to save time. totally worth trying,...

Number Of Ingredients 8

8 chicken thighs, skinless and boneless (or substitute chicken breasts)
2 Tbsp butter
6 medium sweet potatoes (cooked, peeled, and quartered)
4 bananas, sliced
2 can(s) (11 oz each) mandarin oranges, drained
2 can(s) (8 oz each) crushed pineapple (pineapple chunks are ok too)
20 oz sweet and sour sauce
2/3 c chopped almonds (i used pecans...walnuts are ok too)

Steps:

  • 1. In large skillet, cook chicken in butter. I actually cut the chicken into lg. bite size pieces instead of keeping them whole. Either way works fine.
  • 2. In ungreased 9x13 baking dish, mix sweet potatoes, bananas, oranges and pineapple.
  • 3. top with chicken
  • 4. pour sweet and sour over the top
  • 5. sprinkle with nuts
  • 6. bake uncovered 350 25-30 min
  • 7. *** try serving it over rice for variety***
