TRI-COLOR ROASTED POTATOES image

Number Of Ingredients 8

2 large or 3 medium sized sweet potatoes, peeled and sliced
4 medium sized gold Yukon potatoes, sliced (leave skins on)
4 small or medium red skinned potatoes, sliced (leave skins on)
Olive Oil
Rosemary
Thyme
Salt
Pepper

Steps:

  • Wash and peel the sweet potatoes and thinly slice the all potatoes. Leave skins on the gold Yukon and red potatoes. In a large baking pan, coat generously with olive oil. Spread the potatoes on the pan and stir and coat the potatoes in the olive oil on the pan. Add more olive oil if needed. Sprinkle with the herbs. Bake at 450 degrees until golden brown. Sprinkle with salt and pepper to taste.
