We jumped on this one when we saw it at Pillsbury.com. Can you beat the combination to get everyone to eat? Kids to kids at heart will love this, and using black beans rather than ground beef will make an instant vegetarian meal.

2 bag(s) (16 oz) frozen tater tots
1/2 lb lean ground beef
1/2 pkg taco seasoning mix (about 2 tablespoons)
3 Tbsp water
1 1/2 c mexican cheese blend
1 c thick and chunky salsa
shredded lettuce
sour cream and guacamole, if desired

Steps:

  • 1. Heat oven to 425. Line cookie sheet with sides with foil or cooking parchment paper. Place frozen potatoes on cookie sheet. Bake as directed on bag.
  • 2. Meanwhile, in 10-inch skillet, cook beef over medium heat 8-10 minutes, stirring occasionally, until thoroughly cooked; drain. Add taco seasoning mix and water. Cook about 2 minutes or until hot.
  • 3. Sprinkle potatoes with beef mixture and cheese. Bake 3-5 minutes or just until cheese is melted. Top with lettuce. Also, top with sour cream and guacamole, if desired.
