This is definitely not your basic coleslaw recipe. The earthy flavor from the curry shines in every bite. Along with the pineapple and raisins, your taste buds are taken to the tropics. Super easy to prepare, this will be great at your next BBQ. But make sure to make this ahead of time. The flavors get even better after sitting in the fridge for a few hours.

Steps:
- Shred the carrots if you are doing it yourself.
- Add the shredded carrots to a large bowl.
- In large mixing bowl, whisk together the mayonnaise, salt, sugar, pineapple, raisins, curry powder, garlic, ginger, celery seeds or leaves and cilantro.
- Add the carrots and combine.
- Serve immediately or refrigerate for an hour to chill. The longer it sits the more flavorful it becomes.
- You can always add some sugar glazed almond slices for crunch. I have added toasted coconut as well... just sprinkled some over the top. It is awesome!
