Number Of Ingredients 12

2 Tbsp olive oil
1 kielbasa sliced
6 c chicken broth
28 oz tomato crushed
2 pkg tortellini, cheese stuffed (9oz) refrig.
19 oz can kidney beans rinsed and drained
1 medium onion diced
2 clove garlic minced
1/4 tsp basil, dried
ground pepper to taste
2 c baby spinach chopped
1/4 c parmesan cheese

Steps:

  • 1. Heat broth in a large stock pot. In a small fry pan heat olive oil, add onions and garlic and saute' till the onions are golden brown. Add these to hot broth, add tomatoes, beans, seasonings.
  • 2. Heat soup to boiling over medium high heat, stirring occasionally. Add tortellini's and reduce heat to simmer, add kielbasas, cook soup for 5 minutes or till the tortellini is done, stir in the spinach and sprinkle the Parmesan cheese in each bowl.
  • 3. Serve with a good crusty bread. ENJOY
