How to make TONY ROMA'S BLUE RIDGE SMOKIES SAUCE:

From the four popular barbecue sauces served at Tony Roma's, this is the only sauce that wasn't included in my book (you can get my book here). This smoky and sweet barbecue sauce works perfect on pork spareribs. You can even use it in any recipe
Makes: 1 ½ cup
Ingredients:
1 and ½ Tsp liquid smoke
½ Tsp salt
About ¼ Tsp black pepper
¼ Tsp onion powder
¼ Tsp garlic powder
1 c red wine vinegar
1 c ketchup
½ c brown sugar
¼ c molasses

Steps:

  • Procedure:
  • Mix all the ingredients in a medium-size saucepan. Keep the heat high.
  • Whisk the mixture until it turns smooth.
  • Bring the mixture to a boil. Then, turn down the heat.
  • Allow the mixture to simmer, leaving it uncovered, for about 30 to 40 minutes, or until it thickens.
