TOMATO SOUP FLORENTINE image

Number Of Ingredients 9

1 yellow onion, chopped
1-2 cloves garlic, chopped
1 large can tomatoes, with juice (I used diced.)
1 quart vegetable stock
1 T oregano, dried
1 branch fresh basil leaves
2 cups spinach
1/2 pint heavy cream
Salt and Pepper to taste

Steps:

  • Saute onions and garlic. Add tomatoes with juice and stock, simmer about 1/2 hour. Add spinach, herbs and cream. Puree all ingredients.
