THREE LAYER CARROT CAKE image

CAKE BATTER:
2 Cups Sugar
2 Cups Plain Flour
1 Tsp Salt
2 Tsp Baking Soda
3 Tsp Cinnamon
2 Tsp Baking Power
4 Eggs
3 Cups Grated Carrots
1 1/2 Cups Corn Oil
FILLING:
1 Stick Oleo (Soft)
1 - 8oz. package of Cream Cheese
1 Box Powered Sugar
2 Tsp Vanilla
1 Cup Chopped Pecans
FROSTING:
1 - 8oz. Package Cream Cheese
1/2 Stick Oleo (Soft)
1 Box Powered Sugar
2 Tsp Vanilla

Steps:

  • - Mix dry ingredients, then add eggs, carrots and oil. Place in three greased floured round cake pans and bake at 325 degrees for about 45-minutes, or up to an hour. - Mix the filling ingredients. - Mix the frosting ingredients, adding milk to thin to the right consistency. - Cool the cake, then frost, cover and refrigerate.
