THREE CHEESE STUFFED POBLANO CHILES image

Number Of Ingredients 19

Black Bean Sauce:
1 onion, chopped
3 cloves garlic, chopped
1-1/2 c black beans
1 t chipotle paste
1 c heavy cream
Mango Pico de Gallo:
2 mangoes
1 red onion
1 tomato
1 bunch cilantro
1 lemon, juiced
5 T olive oil
salt and pepper
Stuffed poblanos
4 poblano chiles
1 c goat cheese
1 c Monterey Jack cheese
1 c Cheddar cheese

Steps:

  • For the black bean sauce, saute onion with garlic, add black beans, chipotle and heavy cream, blend until smooth. For the mango pico de gallo, cut mangoes and all ingredients into small cubes, dress with lemon juice, olive oil, salt and pepper. Roast and peel the chiles. Shred cheeses and stuff chiles, warm in the oven until cheeses start to melt. Serve with black bean sauce and mango pico de gallo.
