Steps:
- 1. Cook Pasta Rings in boiling water according to package directions. Drain and rinse.
- 2. Meanwhile, In a large deep skillet, coat the bottom with olive oil and add the Italian sausage, onion, red pepper, mushrooms and garlic, breaking up the Italian sausage with a large spoon. Season with salt and pepper to taste.
- 3. Add the red wine, crushed tomato and the tomato paste, basil, parsley, and oregano. Blend well. Simmer while the pasta finishes cooking.
- 4. Mix together the ring pasta and tomato mixture, the parmesan cheese, and cottage cheese until well combined.
- 5. Spread pasta mixture into a 9x13 glass casserole.
- 6. Now top with the shredded mozzarella and loosely cover with aluminum foil.
- 7. Bake in a 350 degree oven for 20 minutes covered, then remove foil and bake 10 minutes more, uncovered.
