Three Bean Enchilada Chili image

Number Of Ingredients 10

1 tablespoons vegetable oil
1 units onion
1 units green pepper
28 ounces tomatoes
16 ounces pinto beans
15 ounces black beans
10 ounces enchilada sauce
1 teaspoons dried oregano leaves
1 units tortilla chips
1 units shredded cheddar cheese

Steps:

  • 1. Heat oil in sauce pan over medium heat. Cook onion and pepper in oil for 5 minutes until tender.
  • 2. Sir in remaining ingredients, except chips and cheese. Heat to boil; reduce heat to medium-low. Simmer 10-15 minutes.
  • 3. Sprinkle each serving with broken chips and cheese.
