The Only Tomato Soup and Grilled Cheese Recipe You'll Ever Want image

Number Of Ingredients 11

1 tablespoon Butter
1 Sliced Onion
3 cloves Garlic
1 can Crushed Tomatoes
1 box Chicken Broth
1 cup Heavy Cream
1 pinch Salt
3 pinches Pepper
4 slices Bread
2 cups Shredded Cheese
1 tablespoon Olive Oil

Steps:

  • Tomato Soup:
  • Melt the butter in a large pot over medium-high heat.
  • Add the onion and stir for 6-8 minutes, until the onions brown.
  • Add crushed garlic cloves, stir for another minute.
  • Stir in crushed tomatoes, chicken broth, heavy cream, salt, and pepper.
  • Bring it all to a boil, lower the heat, cover, and simmer for 15 minutes.
  • Remove the soup from the heat and transfer it to a blender.
  • Optional: You can also leave the soup in the pot and use an immersion blender, instead of standard blender.
  • Blend for two full minutes, or until the soup is smooth and thick.
  • Grilled Cheese:
  • Preheat oven to 400°F (200°C).
  • Cut the crusts off the bread. (Save crusts for later)
  • Arrange your bread slices on cookie sheet.
  • Crush garlic cloves & melt butter.
  • Combine the melted butter and garlic in a bowl.
  • Using a silicone pastry brush, spread the mixture over each piece of bread. Dab all four sides of the bread.
  • Cover bread slices with generous amount of shredded cheese.
  • Bake bread slices for 15 minutes, or until golden brown.
  • Place tomato soup into serving bowl(s) to cool.
  • Homemade Croutons:
  • Take crusts previously cut from bread slices.
  • Add crusts, olive oil, oregano, pepper, and salt to a bowl.
  • Toss everything until completed coated.
  • Transfer the crusts to a large baking sheet.
  • Bake croutons for 5 minutes, or until golden brown.
  • Add crouton fries to soup.
