The Folded Pizza Pie Marinated Chicken Breast image

1/2 cup Italian seasoning blend
1/4 cup extra-virgin olive oil
1/4 cup balsamic vinegar
1 tablespoon minced garlic
1 tablespoon chopped fresh Italian parsley
2 teaspoons freshly ground black pepper
2 teaspoons kosher salt
1 1/2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
2 pounds boneless, skinless chicken breast, diced into 1/2- to 3/4-inch cubes
Serving suggestions: pita bread, flour tortillas, Caesar or mixed green salad

Steps:

  • Add Italian seasoning blend, oil, vinegar, garlic, parsley, pepper, salt, cinnamon and nutmeg to a bowl with a lid and mix to combine. Add chicken and refrigerate, sealed, for 12 to 24 hours to allow all ingredients to marry up.
  • Preheat oven to 450 degrees F.
  • Spread chicken evenly on a cookie sheet, add 1/2 cup water and bake until cooked through, 15 to 18 minutes.
  • Serve in pita bread or flour tortillas or on Caesar or mixed green salads.
