The Elvis (peanut butter banana bread) image

Love me some peanut butter and banana sandwiches. Why not banana bread? Wanna make it a true Elvis bread? Try adding some crumbled bacon into the mix.

Number Of Ingredients 11

1 3/4 cup(s) flour
1 1/4 teaspoon(s) baking powder
1/2 teaspoon(s) baking soda
3/4 teaspoon(s) salt
1/3 cup(s) shortening (crisco)
2/3 cup(s) sugar
2 - beaten eggs
3 medium ripe bananas (black)
1 teaspoon(s) vanilla extract
1 cup(s) peanut butter chips
4-5 slice(s) cooked and crumbled bacon (optional)

Steps:

  • sift flour, salt, baking powder and soda. set aside.
  • cream shortening add sugar and eggs. add flour and mix
  • pour into prepared 9x5 loaf pan and bake in preheated 350 degree oven for 1 hour. start checking bread for doneness at around 50 minutes. not sure why and it doesn't happen all the time, but sometimes if I let this go for the full 60 minutes it overcooks. so I just start watching it after 50
