Chocolate Chip Pudding Cookies image

These cookies are truly delicious, and don't take long to make.

Number Of Ingredients 9

1 c (2 sticks) butter, softened
3/4 c dark brown sugar
1/4 c granulated sugar
1 (1 oz.) pkg. baker's choice sugar free instant vanilla pudding mix
2 large eggs
1 tsp vanilla extract
2-1/4 c all-purpose flour
1 tsp baking soda
1 (11.5 oz.) pkg. milk chocolate chips

Steps:

  • 1. Preheat oven to 350°F.
  • 2. In a bowl, combine the flour and baking soda. Then set the bowl aside.
  • 3. In a large bowl, mix the butter, brown sugar, and granulated sugar.
  • 4. Now add in the pudding mix and vanilla extract. Beat until creamy.
  • 5. Add the eggs and mix well.
  • 6. Gradually stir in the flour mixture.
  • 7. Now stir in the chocolate chips.
  • 8. Drop by tablespoonfuls onto an ungreased baking sheet about 1-inch apart. (I used a Pampered Chef Medium Cookie Scoop to make each cookie.)
  • 9. Bake in oven for 9 minutes, then carefully remove the cookies, and place on a wire rack to cool.
  • 10. Yields: 42 (2-inch) cookies
  • 11. I wanted to let everyone know, that after the cookies cool, I place them in a Tupperware container, and place them in the freezer. They do keep well for quite sometime in the freezer. But I must admit, these cookies are quite addictive.
