THE DEVIL'S OWN DEVILED EGGS image

Number Of Ingredients 10

*12 eggs
*1/4 cup Homemade Mayonnaise
*1 tablespoon Dijon mustard
*1 tablespoon Thai-Style All-Purpose Hot Mixed Curry Paste
*2 tablespoons chopped fresh red or green jalopeno chile peppers
*2 tablespoons chopped scallion
*2 tablespoon chopped cilantro
*Salt and freshly cracked *black pepper to taste
*Pickle ginger for garnish
*Chutney for garnish

Steps:

  • Fill a large mixing bowl half full of cold water, and add a tray of ice cubes. Place the eggs in a pan of cold water to cover and bring to a boil. Boil for 10 minutes, remove the eggs from the water, and plunge them into the ice-water bath. Cut the eggs in half and scoop out the yolks. In a medium bowl, mash the yolks together with the mayonnaise, mustard, and curry paste. Add the jalapenos, scallion, cilantro, salt and pepper to taste, and mix well.
